Oops, I think I’m a little late to the chickpea tuna party.
I don’t know what took me so long, really. I kinda of knew that you could do this thing, but I never bothered to try it.
Right. I think it’s because vegan mayo is so damn hard to find in my country! Okay I’m exaggerating. It’s not that bad. But I would have to go out of my way to get it and you know…I’m kinda lazy.
So after seeing maybe like a million chickpea tuna-related pictures on my Facebook feed (I am in a couple of vegan groups you see) I decided to just get my lazy ass out of the house and hunt for it. They just look soooooo good you know?!
So…here I am! Sharing my version of the vegan chickpea tuna recipe!
And I’m kinda pissed I didn’t do this sooner >=( Because it’s so good?!?!?!? At time of writing, I’ve been eating this almost every day for the past 2 weeks. I’m not even kidding.
Partly because I’m testing the recipe, but mostly because it’s so freaking easy and soooooooo delicious!
And it’s awesome vegan PROTEIN. So I don’t feel that guilty about it!
Let me first put a little disclaimer here. This is a super basic aka lazy chickpea tuna recipe. I only threw in vegan mayo and some brown mustard, plus the chickpeas of course. There are fancier versions out there, and I just wanted to say…this isn’t it.
This is just straight up, basic and simple chickpea tuna.
But still yummy! Just not fancy :p
I also opted to only put cucumbers in my sandwich but you can really put whatever you want. Salad greens are kinda expensive where I’m from (cucumbers are way cheaper) so I didn’t do that. Tomatoes are not very nice where I’m from (usually yellow-orange-ish and not very red/juicy – they’re sad tomatoes basically 🙁 ) so I didn’t include that in either.
WHY AM I EXPLAINING THESE USELESS THINGS okay let’s move on.
Alright. You might wonder, what the hell am I supposed to do with the rest of the cucumber after using those few slices?!?!
MAKE MY AWESOME CUCUMBER SALAD.
I promise you, you won’t regret it. It’s my favourite salad OF ALL TIME! Beats alllllllll the fancy salads I’ve ever had. Plus it’s super easy. SO DO IT!

Note: This can be made gluten-free if you can get your hands on some gluten-free bread! It is also no onion no garlic, so YAY! Allium-free too!

Easy Vegan Chickpea Tuna Sandwich
Ingredients
Easy Vegan Chickpea Tuna Sandwich
- 4 slices artisan bread or sandwich bread
- 6 slices japanese cucumber approximately
- 1/2 cup chickpea tuna
Chickpea Tuna
- 1 15 oz canned chickpeas
- 3 teaspoons vegan mayonnaise
- 1/2 teaspoon brown mustard
Instructions
Chickpea Tuna
- Drain chickpeas into a bowl and mash with a potato masher.
- Add vegan mayo and brown mustard and mix thoroughly. Salt to taste if necessary.
Easy Vegan Chickpea Tuna Sandwich
- Toast 4 slices of bread (this serves 2).
- While toasting, slice about 6-8 slices of cucumber from a japanese cucumber, diagonally. I prefer the japanese cucumber but you can also use the normal kind.
- When the bread has toasted, lay about 3-4 slices of cucumber on 2 slices of bread.
- Add about 1/4 cup of chickpea tuna on each of the 2 slices, on top of the cucumber. Spread evenly.
- Close the sandwich lid by adding the extra 2 slices of bread on top of the chickpea tuna. Done! Easy 🙂

Sometimes fancy is totally overrated and the simple, classic recipe is the way to go. This looks like a great, protein packed lunch or snack!
Whaaaaat?! How have I never heard of chickpea tuna? Tuna wraps are a staple lunch around these parts and I can’t WAIT to give the chickpea tuna a try!!!
