Toast 4 slices of bread (this serves 2).
While toasting, slice about 6-8 slices of cucumber from a japanese cucumber, diagonally. I prefer the japanese cucumber but you can also use the normal kind.
When the bread has toasted, lay about 3-4 slices of cucumber on 2 slices of bread.
Add about 1/4 cup of chickpea tuna on each of the 2 slices, on top of the cucumber. Spread evenly.
Close the sandwich lid by adding the extra 2 slices of bread on top of the chickpea tuna. Done! Easy :)
