Ingredients
  

Easy Vegan Chickpea Tuna Sandwich

  • 4 slices artisan bread or sandwich bread
  • 6 slices japanese cucumber approximately
  • 1/2 cup chickpea tuna

Chickpea Tuna

  • 1 15 oz canned chickpeas
  • 3 teaspoons vegan mayonnaise
  • 1/2 teaspoon brown mustard

Instructions
 

Chickpea Tuna

  • Drain chickpeas into a bowl and mash with a potato masher.
  • Add vegan mayo and brown mustard and mix thoroughly. Salt to taste if necessary.

Easy Vegan Chickpea Tuna Sandwich

  • Toast 4 slices of bread (this serves 2). 
  • While toasting, slice about 6-8 slices of cucumber from a japanese cucumber, diagonally. I prefer the japanese cucumber but you can also use the normal kind.
  • When the bread has toasted, lay about 3-4 slices of cucumber on 2 slices of bread. 
  • Add about 1/4 cup of chickpea tuna on each of the 2 slices, on top of the cucumber. Spread evenly.
  • Close the sandwich lid by adding the extra 2 slices of bread on top of the chickpea tuna. Done! Easy :) 

Notes

This can be made gluten-free if you can get your hands on some gluten-free bread! It is also no onion no garlic, so YAY! Allium-free too!
I don't like a very "creamy" chickpea tuna, so my mayo (and mustard) amounts are quite conservative. Feel free to add a bit more to your liking!
